Comments: As per interview, the operator recognized the need to train staff and then had a 2 hour training seession conducted by an employee who also works at a SUNY PLATTSBURGH food service. All food handlers, except one were at the training session. Today the following were present and being used showing why all violations were corrected. 1) HACCP STYLE logs for all temperature control points. The logging formats came from two employees who also work at institutional food services. 2) Staff were fluent in thermometer calibration and use. 3) Staff were fluent in the use of sanitizer, test strips, and wiping cloth storage. 4) Without looking at a reference, staff were able to state the specific temperatures required for all control points. 5) Proper heights of an ice bath were bein used for cold holding. 6) Two to Three inche food depths when cooling; achieving total cooling times in the range of 2-3 hours. 7) Three new digital thermometers eliminating the staffs visual inability to see 2 degree increments on a thermometer dial scale as limitation in staffs ability to accurately monitor temperatures. 8) Replacement of an old home style counter with a new stainless steel table. 9) The operators choice to order 3 plastic coated refigerator light bulbs when only 1 was needed. 10) Staff were properly trained to accomplish the requirements of handling food safely. | ||

Comments: The following improvements were noticed. Food handlers were wearing hair restraints, using accurate thermometers to monitor all critical control points, able to state the last cold holding temperature monitored for each refrigeration unit especially the deli case. The deli case door spring has been ordered. Duct tape is being used as a temporary solution. As requested, the operator started a cooling log and identified all menu items requiring proper cooling and reheating. They were received at inspection. Ice bath method was confirmed to be understood by operator. Inspector taught specifics needed for thick meats, thin meats, and panned items. No drain pipe leaks. All handwash stations were fully stocked and being used. Screen door spring was replaced. Tape is being used as a temporary solution until new stainless steel counter and new refrigerator handle are obtained. Operator was not able to find a shield for kitchen refrigerator lightbulb. Inspector recommended seeking a plastic coated bulb. Operator said they would seek a plastic coated bulb today. Operator took corrective action to address every violation stated on 4/19/16 inspection report. | ||
