CORRECTED 5A & 5E - At 3:10 pm these inspectors found 2 lbs of bacon in cooler drawer at cook line that temped at 55 degrees F. Chef stated that bacon had been left in cooler overnight. Chef discarded bacon voluntarily. CORRECTED. Note: Drawer appeared to not seal properly. Ambient air in drawer is 50 degrees F. Cannot store any hazardous foods in it until repair is made. 8A - Cloth towel is used as cover for lettuce, not a food-grade material. 2C - At 3:20 pm these inspectors found raw hamburgers stored in plastic bin above ready-to-eat mandarin oranges and salad dressing. CORRECTED. Note: Burgers had been found in McCall unit. 15B - Lights are not shielded in liquor room.

Manager stated cooked on Tuesday and was probably around 18 lbs to start. was cut in half but weighed 8.5lbs on scale. Manager voluntarily discarded and corrected. Discussed proper cooling procedures.
