Inspector explained to kitchen manager the critical control points involved with preparing food requiring time / temperature control for safety; in regard using food probe thermometer to ensure proper cooking, cooling (120F to 70F in two hours; 70F to 45F in four hours), reheating (greater than 165F), hot holding (greater than 140F) and cold holding (less than 45F) holding. Inspection occured at the beginning of food service event. Kitchen manager did have a temperature log sheet with intent to document serving line temperatures on an hourly bases throughout the event. This temperature documentation was the result of instruction from a past inspector. |

Discussed food safety practices with kitchen manager: thermometer use, hand washing, no bare hand contact when handling "ready to eat" food, sanitizing. Food was moving off the buffet line as breakfast was busy. Inspector will mail hand wash signs and food safety packet that should be shared with volunteer food workers. |
