Comments: No violation were observed during the Inspection. Menu: Tomato soup, turkey bologna sandwich with lettuce, dill pickle, low-fat yogurt, crackers, applesauce and milk. Menus consists of Cook & Serve food with little to no leftovers. If there are leftovers they are discarded and not reserved. 1) Discussed heating of pre-cooked commercially packaged foods to 140F within 2 hours and then hot holding at 140F or greater until serving. Key factor is following the cooking instructions on package label. 2) Discussed that expiration dates and used by dates are not regulated by Part 14, Subpart 14-1 Food Service Establishments, but food items should be fit for human consumption. | ||

Comments: No violations were observed during the inspection. Menu: Turkey ham, lettuce/cheese, whole wheat bread sandwiches, turkey ham & bean soup, crackers, milk and a Mandarin oranges. All food items were cooked/prepared and served today, with the exception to the beans which were soaked in water in the refrigerator prior to cooking the soup. The hot held soup temperatures were greater than 140 F and the cold held sandwiches were less than 45 F. The temperatures of refrigerators are recorded twice daily (morning and night). Sanitizer solution concentration is tested and recorded three times daily and dishwasher water temperatures are recorded daily. The calibration of three stem thermometers were verified with the ice bath method. Ill worker policy discussed and in place. Very clean, well organized and managed facility. | ||

Comments: No violation were noted during the inspection. Quantinary ammonia sanitizer solution for food contact surfaces was witin the recommended 100 - 200 ppm. The chemical supplier adjusted the sanitizer dispensing unit prior to this inspection based on NYSDOH standards and the "Quat Sanitizer Technical Data Sheet" provided by Ecolab's. The lunch served on the day of inspection included Spanish rice (prepared that day), Mexican corn ( panned up the night before into Hotel pans and stored in the refrigerator), fig cookie, apple and milk. As per Larry Bedard all leftovers are discarded. I verified that all hot holding items were 140 degrees or greater and cold holding was less than 45 degrees Fahrenheit. During the inspection Larry and I discussed proper cooling procedures, we also discussed that when serving Scoops are stored in a product the handle has to be placed to prevent cross-contamination. It was also discussed to place an empty sheet pan on the top shelf of the speed rack to assist with protection of food during storage period. Very clean well-run facility. | ||

Obtaining hot water required pushing in a button for several minutes (over 5 min.). It is important thorough hand washing occurs immediately after using the restroom Quantinary ammonia sanitizer used on food contact surfaces exceeded 400 ppm. Kitchen manager had contacted chemical supplier and it was learned (via poster provided by supplier) that sanitizer concentration for food contact surfaces was acceptable at 150 to 400 ppm of Quantinary ammonia. However, that was contrary to what was found on sanitizer container which, specified 100 to 200 ppm for food contact surfaces and 150 to 400 ppm for non food contact surfaces. Menu served for lunch on day of inspection included the following: Turkey hotdogs with bread, vegetarian baked beans, Cole slaw, orange and milk. Dicsussed prep process of Cole slaw (pre-chilling of ingredients) with kitchen manager. Cabbage and vegetables were processed the day before and combined the day of serving. Facility menu comprises of cook and serve prepared food. Leftovers are discarded. Kitchen is clean and we'll organized. Actual date of inspection was 2/5/15. |
