Upon questions manager daily temperature logs are taken morning and night of food product on line. Logs available during inspection. If any food product on line reaches a temperature of 42 or above, food product is placed within ice bath within prep unit. Food is checked half an hour after ice bath is implemented, if temperatures are not below 42F, food is discarded. Manager states that yesterday afternoon (9/7) , ice was placed under Tuna, because Tuna was @ 42F. After half an hour it was 39F. Manager states icing food that normal procedure if product is above 42F.
