Comments: Mop water is discharged to the sink bay sink located in the kitchen. This sink can only be used for cleaning mops, tools and disposal of mop water. It is recommended that this sink be labelled (mop sink - no food prep or hand-washing). During this inspection, reviewed previous inspection report and developed new Time Table of Compliance for structural violations that were cited. Information on storage requirements for flour and breading mixtures will be emailed. The operator has purchased a CPR station and plans to mount it to the wall this week. Information on proper steps for ware-washing, cooling, cooking and cold holding was provided. Prior to any major renovations (I.e., reactivating walk-in cooler, installing dishwasher or renovating bar area) a Notice of Intent Form must be completed and submitted to DOH. A copy of this form will be emailed.
