Comments: The purpose of this inspection was to verify compliance with Time as a Public Health Control procedures. TPHC logs were reviewed. The sliced American cheese for the subs was added to the TPHC log. Please remember to record the time each item was initially placed on the service line and the discard time on the log sheet for both service lines. These time were not recorded on todays TPHC log for one of the service lines. Reviewed the cooling logs from the blast chiller. Food temperatures must be at 120 F or above at the start time (when the product is placed in the blast chiller). Provided DOH cooling log for recording cooling times and temperatures for hard boiled eggs. Staff was instructed by an example of how to complete the cooling log for hard boiled eggs. Acceptable methods for cooling hard boiled eggs were also discussed. Discussed food temperatures during preparation. Foods that have increased in temperature during preparation and that have been in an unacceptable temperature range for less than 2 hours, must be properly cooled back down to 45 deg. F or below. Food temperatures measured: Deli ham = 45 F and 41.7 F, shredded cheese = 40.5 F.
