Cooked chicken was measured to be between 170 and 185 degrees F after being removed from the oven. Discussion with staff on the use of proper cooling techniques, Meats are to be reduced to portions of 6-8 pounds to allow for proper cooling, cooling as well as cooking temperatures are to be monitored to ensure food safety. Discussed the minimum temperature for cooking previously cooked potential hazardous items with the operator and the storage of frozen food items in the Walk-In Cooler/Freezer. The following acceptable temperatures were measured (degrees F): Walk-In Cooler - Potato Salad - 45.5, Sliced Deli American Cheese - 40.3, Sliced Deli Ham - 41.4, Sliced Deli Turkey - 41.3; Milk Cooler Air Temp - 39; Two Door Raetone Reach-In Cooler Air Temp - 28. The Fire Suppression System on the Ventilation Hood was inspected in August 2015 and the Final Rinse Temperature on the Mechanical Dish Washer was 181 degrees F. Report e-mailed.
