Also instructed to have floors of both walk-in refrigeration units and the pantry storage room cleaned. Operator needs to supply proof of exterminator treatment for rodent activity/harborage points. Comments: Re-visit for rodent check. Facility has cleaned surfaces previously soiled. Checked thoroughly under grill equipment (area of heaviest prior activity). However, since cleaning, custodial and kitchen staff have noted mouse droppings and possible evidence of food consumption by a rat. Larger traps are in place, but have not caught any rodents yet. Will continue to monitor and clean/sanitize surfaces until rodent activity has stopped. Re-inspect in 2-3 weeks.

Instructed to clean floors under cook line to prevent pest attraction, and to clean and sanitize rear storage floors. Re-inspect 2-3 weeks.

Operator states one mouse was captured a few days prior to inspection. Side wall panel of Cleveland unit left disassembled, after maintenance. Wiring had to be replaced due to rodent damage. Holding temperatures ok. Instructed to clean droppings and continue monitoring rodent activity. Follow up in 2-3 weeks.

Milk coolers operating at 39°F and 42°F. Dishwasher ok. No evidence of mice in cafeteria areas, although staff indicated reports of mice in classrooms due to food storage in desk drawers.

Continental 2 door cooler has been serviced last week, log on cooler door with temperatures noted at 32-34 degrees in morning and 42 degrees at end of day with exception of 2 days reading at 47 and 50 degrees. Per manager, believes those were before the cooler was serviced. Large fluctuation in temperature noted during serving times, probe thermometer left in cooler, reading 30 degrees after 10 minutes. Discussed monitoring of food with probe thermometer during serving times to verify cooler is working adequately.
