Comments: Comments only: 1. 39°F was recorded when ice water was used to calibrate facility's stem probe thermometer. Manager, Chris Sherman, retrieved a back up thermometer and that one read 32°F in ice water. Must use this thermometer until the other thermometer is properly calibrated. 2. Discussed 9/21/17 complaint with manager, Chris Sherman. Chris is aware of the complaint. He said the complainant brought back the metal twisty tie to the facility. Chris said the twisty tie the complainant brought in was yellow and the twisty ties on the wheat and white bread located at facility are green. All other bread arrives in bags that have a square plastic clip that secures the bags. No other complaints have been received. 3. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
