Comments: 3C: Waitress observed putting 3 slices of Italian bread on a plate without using a sanitary barrier at waitress station. Bread was voluntarily discarded. Napkins are now used. 5A: 3 flats of raw shell eggs found in Trautsen cooler reading 54-68oF. Eggs were voluntarily discarded after checking several temps with Inspector's calibrated thermopen. 5E: Trautsen cooler had an ambient air temp of 50oF. Thermometer in cooler agreed with inspector's calibrated thermopen. Cook adjusted dial on top of unit to a cooler setting. Steaks and hamburgers temped at 43oF and 45oF respectively. They were stored on frozen product (add'l. steaks and burgers) which were thawing, hence helping keep them cold. They were removed to walk-in cooler. 3 flats of shell eggs (see 5A above) were discarded. Cook will monitor cooler. If it doesn't respond, he will have owner call repairman and will move any other PHF's to other coolers.

(Corrected) 10A--Cutting boards have pitted surfaces and show discoloration. 10B--Dry storage shelving and shelving in walk-in cooler are rusting and bare wood shelving in walk-in cooler is not smooth and easily cleanable. 11C--Bucket for wiping clothes had soap and bleach in them showing 10ppm chlorine level using chlorine test strips. 100ppm chlorine sanitizer solution made with no soap included. (Corrected) 11D--Gaskets of Beverage-Air and Traulsen Coolers have food debris build-up. 12C--Walk-in cooler and freezer are draining into buckets that workers change when needed and 3-bay sink is leaking into bucket under it. 15A--Walk-in cooler floor is rusting, not smooth and easily cleanable.
