Comments: Hamilton Central School, inspection conducted Friday at lunch. First line starts at 10:40am, last line starts 12:35pm. Soups, sandwiches (egg and tuna salad), pizza, and cold veggies and fruit. Hot holding soup and pizza observed adequate: 161-168F. Cold holding salad and fruits and veggie cups adequate, ice baths and cryopaks utilized. Digital thermometer used. Refrigeration log maintained. Soft-Serve ice cream hopper mix observed, 38F. The rusty shelf at the cookline has been replaced. The walk-in cooler condenser has been replaced. Discussed with kitchen manager, the additional procedures to the daily routine to deal/with the leaking refrigerator and the scaling build-up and de-liming process that is required at the mechanical dishwasher. Hair restraints and hand barriers are worn.

Comments: Hamilton Central School, cafteria/kitchen inspection conducted Monday at lunch. Hot dogs, baked beans, tater-tots, soups and salads offered for lunch today. Hot holding temps adequate: hot dogs 150F, taters 143F, soups 160 & 170F. Cold holding temps adequate and food is properly protected. Hair restraints and hand barriers utilized. Digital thermometer used. Thermometers installed in all coolers. Observed dishwasher rinse temp at 198F. Staff is complimented for overall cleanliness.

Tomato soup and vegetable soup observed at tempertures ranging from 161-169 degrees fahrenheit. Cold holding temperature of tuna observed at 44 degrees fahrenheit. Both refrigeration and dishwasher logs maintained. Hand barriers utilized as required. Salad bar is no longer utilized; premade "build your own" salads are used as a substitution. Numerically scaled indicating thermometer observed in all refrigeration equipment. Dishwasher operated in accordance with manufacturer instructions; wash temperature at 165 degrees fahrenheit and final rinse temperature at 185 degrees fahrenheit. All food service staff has completed food service training; Food safety in schools training.

Sanitizing solution prepared for use and wiping cloths adequately stored. Wall behind sheet trays will need repainting; wall is just beginning to chip.
