The cookline hood and equipment are scheduled to be professionally cleaned this evening. All cold holding temps throughout prep coolers and walk-in cooler observed at adequate temps, 36-44F. Observed and discussed sausage cooking procedures, cook temp observed,190-200F. Hair restraints and hand barriers are worn. Confirmed high temp dishwasher working as per manufacturer's spec, rinse temp observed 185F. Owners and staff are complimented for cleanliness and procedures. **Satisfactory**

Discussed and questioned the use of liners in the hot holding unit. Hair restraints and hand barriers utilized. Hood is scheduled to be cleaned this week.
