Comments: Caz Sports Bowl, inspection conducted Tuesday at lunch. Hot holding soups and chilli observed adequate, 165-190F. Observed dishwasher operations, rinse temp 120F, sanitizer measurable/observed. Digital stem thermometer used. Restrooms were recently renovated; adequately supplied/maintained. Storage area renovation is complete; floors, walls, and ceiling are smooth and cleanable and lights are shielded. Thermometers installed throughout. Owner/operator scheduled the ice machine service company prior to inspector's departure. Discussed request to owner for additional information in regards to NOI response letter. Operator and staff are complimented for overall cleanliness.

Comments: Facility is well maintained and nicely operated. Irish lasagna, split ham & pea soup, vegetable beef soup and chili observed within hot holding unit at temperatures ranging from 140-174 degrees Fahrenheit. Chicken wings prepared for immediate service evaluated at 205 degrees Fahrenheit. Roast beef, ham, fish and coleslaw observed within upper portion of cold holding unit at temperatures ranging from 35-42 degrees Fahrenheit. Product stem food thermometer(s) evaluated for accuracy. Discussed maintenance and cleaning schedule of walk-in refrigerator condensor fan cover. Discussed the requirement to submit outstanding diagram(s)/fees as required per notice of intent response letter dated December 11, 2017. Bathroom remodel and storage/delivery room addition is nearing completion. Gaskets on refrigeration unit have been replaced.

Cold holding temperature of coleslaw, ham and turkey observed at temperatures less than 44 degrees fahrenheit as stored in upper portion of deli unit(s). Mechanical low temperature dishwasher operated in accordance with manufacturer instructions; final rinse temperature observed at 120 degrees fahrenheit and chemical sanitizer detected. Discussed replacing tile below three compartment sink and along new grease trap prior to a subsequent inspection. Discussed requirement for operator to submit a notice of intent for addition to be located at rear of kitchen which will include installation of walk-in refrigerator.

Comments: Floor grease trap required by Village has been installed and is located in front of three compartment sink, floor repairs are on-going following installation. Operator is exploring refrigeration replacement options; in the event of installation of walk-in refrigerator/freezer submission of NOI is required. Hot holding temperature of chili, soup, etc. adequate at temperatures ranging from 153-171 degrees Fahrenheit. Rear storage area requires completion in regards to sealing floor, walls and ceiling. Encourage operator to install kitchen hand wash sink; current arrangement is one three compartment sink utilized for handwashing, dishwashing, etc.

Discussed sealing bare wood where electrical panel recently installed; all wood must be sealed and nonporous. Discussed linoleum in walk-in refrigeration unit; linoleum is beginning to pull up in areas and will require repair. Observed adequate utilization of hand barriers. Food thermometer evaluated for accuracy. Encourage installation of hand wash sink in kitchen area. Operator to submit notice of intent in regards to rear storage room.

Light fixtures replaced with plastic LED lights. As previously noted, discussed rear storage area and requirements if utiized for food, dish, etc..
