Comments: New York Pizzeria, re-inspection conducted Friday post-lunch rush. Discussed improper utilization and temperature control for the pizza holding cabinet, and the requirement to apply for a "Time as a Public Health Control" waiver. Using a TPHC waiver and maintaining a holding time and discard logbook could eliminate the holding cabinet from the operation. In the time since the last inspection, it appears that most surfaces have been cleaned, but a detailed cleaning was not performed. New chicken wing sauce containers were purchased to replace the previous ones. New shelves and new peel-n-stick tiles have been acquired for the walk-in cooler, but not yet installed. Discussed with employee the perceived coating and accumulation of pizzeria related grime on most surfaces especially handles and other hand contact areas throughout the restaurant. An office conference will be required with the owner and manager prior to another re-inspection.

Discussed use of "Time as a Public Health Control" versus use of a heated cabinet for holding pizza slices and "rolls"; staff reportedly discards slices and rolls after 2-hours. The walls around the cookline have been recently painted. Hair restraints and hand barriers utilized. Discussed, observed, reviewed the weekly sausage cooking routine; sausage should be spread out evenly to ensure consistent internal temperatures throughout, cook temps observed 165-195F. Coke cooler observed clean and sanitary. Discussed re-inspection in 2-3 weeks.

Cleanliness of rear counter area shows improvement however, built-up debris remain. Improvement observed regarding cleanliness of floor below fryer and fryer however, continued maintenance is necessary. Permit application provided at time of inspection.

Soda fountain drained into a maintained bucket below soda machine; discussed draining into plumbing with an in-direct drain. Discussed fryer grease removal; grease shall be removed from establishment promptly.

Screen has been removed from kitchen exit door, new threshold to be placed at base of door. Unused compact refrigerator has been removed from premises. Counter below meat slicer has been cleaned, discussed maintenance and cleanliness of meat slicer. Operator has purchased material and is in the process of painting and making repairs to facility. Discussed requirement for TPHC waiver in the event that pizza will be held for two hours and discarded; this in lieu of the required 140 degree hot holding temperature, waiver request to be provided.
