Comments: Darlene's Kitchen, inspection conducted Tuesday prior to lunch. Hot holding temperatures adequate: cheddar n broccoli soup 160F, and chili 160F. Cold holding prep cooler items found at adequate temps: potato salad 39F, and grill-cooler hash cold holding found at 40F. All refrigeration units have been replaced in the past 2 years. All refrigeration and freezers found with thermometers. New LED light fixtures have been installed in the kitchen. Hair restraints and hand barriers used. A utility sink has been installed in custodian closet, and a restroom refinish project is scheduled for Spring. Discussed vacuum sealing and Reduced Oxygen Packaging (ROP), additional regulatory information shall be provided to operator. Comments: Well maintained and operated food service establishment. Hot holding temperature of vegetable beef soup and chili is adequate at temperatures ranging from 157-166 degrees Fahrenheit. Cold holding temperature of egg and chicken salad maintained in upper portion of deli refirgeration unit is adequate at 40-41 degrees Fahrenheit. Product stem food thermometer evaluated for accuracy at time of inspection. Proper manual dishwash technique implemented. Food preparation occurs in sanitized section of three compartment sink as required. Observed adequate utilization of hand barriers and good glove changing habits. Discussed lack of utility sink at facility; future renovations shall include installation of utility sink with notification provided to MCDOH prior to installation. Discussed shelves and maintenance thereof in dry storage area. Discussed that wall behind bathroom sink will require attention.
