The walk-in cooler was observed to be mainmtained clean. Product stem thermometer calibrated and used. Discussed with owner/operator the pending work to be tackled in May; the ceiling, and the walk-in cooler.

Comments: The Fort, inspection conducted Wednesday post-lunch-rush. No hot holding at time of inspection. All cold holding unit items found at adequate temps: cookline tomatoes 41F, salsa <41F, salad prep unit lettuce 41F, and walk-in cooler coleslaw 41F. Thermometers present throughout. Stem thermometers available and found at proper calibration. A new ice machine (maker unit, not the hopper) was installed at the bar. A new 3-bay wash sink was installed under the bar. Discussed the lack of an indirect drain at either three of the 3-bay sinks. The operation has purchased and replaced their "scoops". Discussed the on-going required maintenance of painted surfaces. Discussed the requirement to use a certified pest management company when dealing with insects or rodents in the establishment. *Owners and staff are complimented for overall cleanliness.
