Comments: As per interview, the display hot holding at "Coyote Jacks" was not maintaining 140*F or greater; therefore, hot holding was eliminated by a cook and serve procedure. Review of logs indicated 1) Cooling with the use of ice bath or placement in a freezer. These methods were showing proper cooling times ranging from 3-4 hours. 2) The much greater than 140*F logged hot holding temperatures were not a result of the hot holding equipment ability to deliver heat, but a result of the readings being taken right after a new cooked item was placed in the hot holding setting. The recorded hot holding numbers which were really cooking temperatures represented proper cooking, but do not represent the hot holding ability of the equipment. This is understandable because of the constant demand during serving hours and the operators policy of constantly monitoring serving line food with a reheat policy to greater than 165*F when a food drops below 140*F.

Comments: This is the second routine 2016 inspection. Yesterday's inspection at another permitted operation has caused management to strictly monitor the cold holding of tomatoes, melon, and tofu. Management has implemented prechilling of canned items; such as, pudding or fruit being sent to cold holding self service. Today's cooling of cooked chicken was 4 hours or less. The new kitchen manager was taught that the ice bath for self service, sealed beverages must be self draining. The "Coyote Jacks" menu requiring of hot holding displayed foods which were not able to be kept above 140*F without constant reheating has been discontinued.
