Operator agreed to unsure the potable water line is with a check valve and the waste water line is with an indirect drain. The cold plate holding in the "gluten free" area may not not be sufficient enough to keep all parts of the food below 45*F. Operator agreed to strictly monitor the foods for 45*F or less. Operator recognized the value of prechilling items before placement on the cold plate.
