Ultra-violet water disinfection equipment was operational- the meter was reading 3. Did not take a water sample during inspection. Plastic gloves and proper utensils available, hand wash sink was supplied with hand soap and towels. Discussed ill food handler policy with staff during inspection.

Comments: Checked Ultra-Violet water disinfection equipment during inspection- is functioning satisfactorily- meter reading 03. Discussed proper use of plastic gloves and utensils with employees during inspection. A Time Table Of Compliance Date of September 4, 2017 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance.

Comments: Observed accurate probe thermometer. Observed UV disinfectant system running appropriately (for water). Observed bleach test strips for testing sanitizing solution. Discussed, with operator, the cooking process of cheese pizza to 140F before serving. Also discussed operator's cooking process must be continuous and once the pizza passes 45F must reach 140F within 2 hours or it must be discarded.
