Regarding Blue Item violation 8A- Tubs of ice cream are covered , protected inside chest freezer in kitchen, RE: Blue Item # 12A- sink located at bar area has both hot and cold water available, RE: Blue Item # 15A- Hole in basement dry storage area was repaired under stairs, Blue item # 15B- Kitchen hood filters were cleaned. Violations have been corrected. Will conduct a HACCP training exercise with kitchen staff later in the year.

Checked Free Chlorine residual at men's locker room hand sink- 0.2 PPM. Cook was observed properly using utensils while working with foods during inspection. Thermocouple and numerical thermometers were available for evaluating cooked potentially hazardous (TCS) foods. Chlorine sanitizer test kit available for evaluating dish machine sanitizer. Due to lack of cold water at bar sink, bar glassware to be washed at kitchen dish machine until both hot and cold water is available at bar sink.

Checked Free Chlorine Residual during inspection- 0.4 PPM at men's downstairs locker room sink. Discussed with Cook- cooking, cooling and reheating of potentially hazardous (TCS) foods during inspection. Cook was observed properly using plastic gloves and utensils during inspection. All hot potentially hazardous (TCS) foods were being maintained above + 140 degrees F. Cook has both thermocouple and numerical thermometers available for checking cooked PHF's- discussed routine calibration of numerical thermometers with Cook. Also discussed routine hand washing for kitchen staff and also ill food handler policy with Cook during inspection .
