Comments: Discussed cooking and storage of cooked bacon. Discussed storage location of raw shell eggs in the reach-in refrigerator. Discussed cooling methods used for smoked meats and soups. No cooling logs have been completed to date. Cooling logs must be occasionally completed to verify that cooling is being properly done. Food temperatures measured were acceptable. Cabbage roll soup = 172° F, Mac & cheese = 165° F, pork shoulder = 39° F, cooked beef = 44° F, sautéed onions = 40° F. Pork shoulder must be re-heated to 165° F before it goes into hot holding.

If re-heating with the intent to hot hold, the meats must be re-heated to 165° within 2 hours and then hot held at 140° F or above. Alternatively, you can heat individual orders on the flat top grill (no specific temperature required). Cooling was discussed, please record a cooling log occasionally (provided a cooling log). Also, place a temporary floor under the smoker (when in use) to prevent grease splatter onto the deck floor. Observed shallow pan cooling of thin cooked steak and sautéed onions. Temperatures measured: sautéed mushrooms = 42° F, salad dressing = 41° F. Discussed storing personal food in the restaurant freezer.
