Item 8E: Accurate thermometers not available or used to evaluate refrigerated or heated storage temperatures Comments: Operator has been keeping logs for the meat pies he makes but lists only the make time of the first meat pie made and the time when the last meat pie is discarded (ex 10:30AM-4:30PM) for the past 6 months or so. Operator states he has a female employee do it and she did not realize the meat pies must be written individually with their make and discard times and it must be within 4 hours. Since the discard time had not yet occurred today, there was technically no critical violation. Guided operator on how to write the logs properly. He notes that he generally makes pies half and half, example half chicken bacon ranch, half buffalo chicken. Told him to write both halves every time with the times it has meat or ricotta cheese. Operator finished logs properly for meat pies made at 10:30AM and observed him discard the rest of them at 2:30PM in adherence to the waiver. Told him we will be back to check on the waiver logs and they must be properly done for every day. |
