Item 11A: Manual facilities inadequate, technique incorrect; mechanical facilities not operated in accordance with manufacturer's instructions Comments: 1) Inspector at the facility in response to complaints received regarding the operation and food handling practices. The complaints and the findings were as follows: a) The owner recently renovated the structure by removing a wall in the prep area and opening it to the customer. Reportedly, he contacted the village and was informed that he did not require a building permit. The DOH was not contacted. b) Reportedly the staff does not use disposable gloves as required. Inspector found a good supply of disposable gloves on hand and the staff on-duty were using them appropriately. c) The meat cooked on the spit has the heat turned off when business is slow. They are no longer using the spit to Cook the meat. Practice is to slice the meat off from the frozen meat roll and portion it. Some is stored in the freezer for later cooking. Some is stored in the cooler for cooking as needed. All meats are cooked on the grill. 2) All temperatures, both hot and cold items, were within acceptable guidelines at the time of the inspection. |
