Facility reopened without permission from this Department. Facility has received permission to reopen by the City of Canandaigua. The area around the cook line has been cleaned and the presence of grease on the equipment is significantly reduced, although the interiors of the equipment on the cook line are still dirty. The floor drain in the storage room with the water softener has been cleaned. The ventilation filter over the deep fryer has been patched but not replaced. Small gaps still exist in the filter. According to Patrick, a replacement filter within the next week. Facility may continue to operate at this time. The general manager agreed to correct all noted violations by 12/31/17. Joint inspection with City of Canandaigua Code Enforcement Officer, Fire Chief, and NYSEG. According to interview with General Manager Patrick on 10/21/17, all food exposed at the time of fire was voluntarily discarded at the time of inspection and the area around the fire was thoroughly cleaned. The gas was shut off by NYSEG at that time. At some point after 10/21/17, the gas was turned on without the permission of NYSEG. NYSEG again shut off gas service at the time of visit. The area on the cook line where the fire was still had significant grease and food residue build up on surfaces and equipment at the time of inspection. It is a requirement of NYSEG and the City that the entire cook line be cleaned prior to inspection of gas lines and returning gas service. City Code Enforcement officer reports that the sewer system of the facility has experienced intermittent failures. The equipment, floor, wall, and ventilation hood on the cook line and the floor drain in the storage room must be professionally cleaned and be free of grease and food debris before the facility can reopen. Facility must also clear the sewer line from the building to street to ensure that sewer line is functioning adequately. Facility must also satisfy the requirements of the City Code Enforcement Officer and Fire Chief prior to opening. Permission must be obtained from this Department prior to reopening. Failure to obtain permission from this Department or the City of Canandaigua prior to reopening may result in an enforcement action by this Department. |
