Comments: Comments only: 1. Several cooked whole baked potatoes and a pan of cooked rice found at pick up winder under heat lamp. These items were temped using a metal stem probe thermometer at 180°F and 168°F, respectively. Per interview with manager, it is corporate policy to hold cooked baked potatoes at the pick up window for a maximum of 15 minutes and cooked rice at the pick up window for a maximum of 35 minutes. At the time of the inspection, there was no accountability system being used to track how long these two food items had been at the pick up window. Manager instructed staff to place a label near both the baked potatoes and the pan of rice that showed the time the product was cooked. I could not located Red Lobster on the most current list of facilities that have been granted a Statewide waiver to use Time as a Public Health Control (TPHC). 2. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.

Comments: Comments only: 1. Food temperatures inside the 4 door waitstaff cooler were recorded at 45F. Recommend servicing this cooler to be sure to keep foods below 45F. 2. Manager ran dishwasher approximately 10 times before the final rinse temperature reached the minimum required temperature of 180F. Machine should reach minimum required final rinse temperature quicker. 3. Cooked baked potatoes located at pickup window were not hot holding. There was no accountability system in place tracking how long potatoes had been stored out at room temperature. Potatoes were temped at 188F. Staff said potatoes were just cooked. Corrected, staff placed wax paper with the cook time written down next to the potatoes. 4. Line cooler containing sliced lemons, tomato sauce, and Korean BBQ sauce is not operational. Thermometer inside read 60F. Informed management not to place any food items in this cooler that require refrigeration until the cooler is serviced and is capable of cold holding all items below 45F. 5. Alfredo sauce located in hot holding unit at cook line was temped using a metal stem probe thermometer at 130F. Manager, Kevin Coakley indicated the sauce is not required to be hot held for food safety. Sauce was removed and reheated to 165F anyway by staff. To follow up. 6. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
