Comments: All previous violations. Owner has a new commercial refrigerator present, nice job. All temperatures good at the time of inspection. Empanada pan in process of being filled for baking at the time of inspection. Owner said BI approved stove with no Empanada frying. Limited food menu at present time- approval temporarily given for 3-bay sink location which is not located in the kitchen but the front left of establishment as indicated in the original plan approval. Approval for current kitchen layout contingent with- all dishes to be washed in the 3-bay sink and compliance with no frying as per the Building Department. | ||

Item 5E (Critical): Enough refrigerated storage equipment is not present, properly designed, maintained or operated so that all potentially hazardous foods are cooled properly and stored below 45°F as required. Item 12E: Handwashing facilities inaccessible, improperly located, dirty, in disrepair, improper fixtures, soap, and single service towels or hand drying devices missing Comments: Re-inspect after 1 week. Food menu was changed to include high risk foods such as Empanadas. The kitchen has been modified and a commercial stove was added to the kitchen. Plans received today, reviewed and updated with the owner. I met Greg Wunner the Building Inspector(BI) at site on 1/15/19 with the owner. A commercial exhaust is not present over the stove. On 1/15/19 the owner had agreed with the BI not to fry any food on the stove since a proper exhaust hood is not present. Note, a hood is present over the stove with no suppresion system. There is ventilation but the owner said today the cord needs to be changed from the hood. Owner has agreed to install a commercial exhaust hood soon (mentioned April). A pot of oil was present on the stove at the time of inspection: the cook said a customer had requested them to be fried and they did. ****As per the BI frying is not permitted. Contact the BI and ask if can saute and cook meat on the stove top without the commercial hood. Owner said will not fry empanada's anymore. Health Department approval for use of new kitchen area may be pending. The Building Inspector said present hood is required to be inspected every 6 months and he will add to CO no frying of foods is permitted. The 3-bay sink is located in the front of establishment may be temporarily approved pending that dishes, pots utensils are only washed in the 3-bay sink. Note- 2 pans present in kitchen handwash sink at the time of inspection, pans were moved time of inpection. Unannounced inspections may occur to ensure compliance with the above. There are 22 seats that are present today in the establishment and was approved for 8 seats. I spoke to Joe Paravotti today about the increase in seats and a public bathroom which he approved for the establishment. |
