Comments: Observed potentially hazardous food or time/temperature control for safety (PHF/TCS) items properly thawing in walk-in cooler and under running cold water with water at a temperature of 46F. Observed lobster properly cooling by use of ice water bath. Discussed placing frozen PHF/TCS items back into walk-in freezer if unable to prepare in a manageable amount of time in order to prevent improper thawing practices and food from reaching temperatures above 45F. Observed staff properly preparing PHF/TCS seafood, including shrimp and scallops in small, manageable quantities to prevent items from reaching above 45F. Staff observed using bin of ice under bin of raw seafood to help keep food at 45F and below while preparing on skewers. Observed shrimp cooked to 160F, lobster cooked to 156F, and scallops cooked to 172F. Observed ice cream scoop properly stored in dipper well with running water. Observed shrimp at 34F in cold-holding unit next to grill. Observed staff properly changing gloves when working with raw seafood, washing hands, and using gloves to prevent barehand contact with ready-to-eat foods.

Comments: Facility in process of receiving and putting away shipment. Discussed storing food items at minimum of 6 inches off floor. Discussed cooling previously cooked foods with lids completely off until food items reach 45F within required cooling schedule time limit of 120F to 70F in 2 hours and 70F to 45F within an additional 4 hours. Observed cooks using gloves on the cook line and waiting staff using tongs for putting cut lemons in ice water to prevent bear hand contact of ready to eat foods. Facility does not cook and cool using reduced oxygen packaging (ROP) methods. Discussed working in small working quantities and 15-20 minute intervals, monitoring temperatures, and placing time/temperature control for safety (TCS/PHF) items, including cheese, back into refrigeration when not in use during preparation of food.

Comments: Reinspection conducted to follow up on time table of correction (TTOC) from previous visit to facility. Item 11A, high temperature dish machine not properly sanitizing dishes, has been corrected. Sanitarian observed dish machine rinse temperature reach an appropriate 184F for sanitizing. No other items evaluated during time of reinspection.

Comments: A Time Table Of Compliance Date of October 18, 2017 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance. Regarding previous violations listed on inspection report of July 24, 2017- food staff were observed doing prep of potentially hazardous (TCS) foods during re-inspection. Staff were directed to work quickly while prepping PHF's and to store cold potentially hazardous foods in refrigerated equipment at less than 45 deg. F until foods are ready for cooking and serving. Facility sink which was leaking at bar sink has been corrected (Blue Item # 12 C)- rear prep sink appears to be acceptable at this time.

Comments: Reinspection conducted to follow up on previous sited items from 4/4/17 inspection. No other items evaluated during time of inspection. Observed adequate levels of chlorine (100ppm), using facility's test strips, in bleach sanitizing solution mixture in wiping cloth bucket. No evidence of condensate waste water issue in walk-in freezer. Observed employee working with small portions of shredded cheese used for making biscuits. Manager stated employees making biscuits portion out enough shredded cheese for each batch in the walk-in cooler. Temperatures of hot held mashed potatoes and rice were found to be 159F and 160F respectively.

Comments: Conducted re-inspection to verify correction of cold-holding of phf/tcs foods, specifically, pico de gallo and sliced sandwich tomatoes. Manager stated pico is now pre-portioned and kept in refrigerator, sliced tomatoes also kept in refrigerator, no longer holding in ice water bath. Sour cream is stored in ice bath, however, it is stored away from heat lamp. Recommended raising level of ice such that much of container of sour cream is in contact with ice, lowering level of sour cream in container, etc. Also, sour cream is acidified, so manager may contact manufacturer to determine if product is phf/tcs. No other items evaluated during reinspection.
