The pH meter that they use to measure the pH of the Sushi Rice gave a reading of 5.2 for the pH 7.00 buffer. The operator obtained a new pH meter and this one was adjusted by the operator to read 7.00 for the same buffer solution. The pH of the sushi rice in water was measured and with stirring a pH of 4.53 was measured for the Sushi Rice. Strongly encouraged the operator to check this rice regularly during the day and to keep their pH Meter in good operating order. Measured the following food temperatures (degrees F): White Rice - 160.4, Fried Rice - 149.0, and Miso Soup - 177.1; Upper Compartment Bain Marie - Raw Chicken - 40.6, Sashimi Line - Ahi Tuna - 42.1, Yellow Tail - 44.7, and smoked Salmon - 37.7 to 38.0. Encouraged the operator to make sure that the smoked salmon was kept at 38 degrees F or lower. The chlorine residual on the dish washer was measured to be 50 ppm. Report e-mailed. |
