Item 8E: Accurate thermometers not available or used to evaluate refrigerated or heated storage temperatures Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: In lower level, walk in cooler had a block of cooked roast beef which had been cooling overnight. No thermometer was available during the cooling process to test temperature over 2-4 hours, per interview with staff. Staff used a probe thermometer from upper level kitchen and the temperature was in the safe zone of 40 degrees in the deep center (about 4inch thick beef). The item was not discarded, and education was given on proper cooling for hot items, and cutting down into smaller portions to chill safely. Also a deeper pan is recommended to avoid any drip contamination from meat product while it is stored with other ready to eat items nearby. Overall, excellent and very organized facility and staff.
