Observed foods in make unit at or below 45F including sliced cheese at 44F, sliced tomatoes at 34F, and commercially precooked chicken at 41F. Observed soups in hot holding units at 191F for both chicken noodle and creamy broccoli soups. Discussed process for cooking commercially precooked meatballs for the first time and stirring occasionally to ensure meatballs and sauce reach 140F or greater throughout within 2 hours by microwave. Discussed that hot holding steam table should not be used to cook or reheat any food items and that all items in hot holding steam table should be held at 140F or greater. Discussed proper hand washing procedures, washing hands whenever soiled, and before entering kitchen. Observed sanitizer bucket of quaternary ammonia at appropriate sanitizing level of 300 ppm using facility's test strips.

Comments: Facility has functional thermocouples. Meatballs in hot holding unit had a temperature range of 140F-168F. Per interview, employee stated meatballs in hot holding unit were reheated from previous day and stated facility reheats meatballs to at least 165F in microwave prior to placing in hot holding unit for service. Discussed approved cooling schedule for meatballs by cooling in shallow depths of no more than 4 inches, without lid, and cooling from 120F to 70F in 2 hours and 70F to 45F within an additional 4 hours. Tomatoes stacked below fill line of insert in cold holding sandwich make unit had a temperature of 38F. Discussed working in small, manageable quantities, working in 15-20 minute intervals, and using pre-chilled ingredients when preparing food containing TCS food items, such as marinara sauce with meatballs. Observed adequate levels of quaternary ammonia (300ppm) in wiping cloth buckets using facility's test strips.

Discussed with operator storing items in the sandwich-make units below the chill line. Discussed with operator storage of employee drinks. Discussed with operator avoiding barehand contact with ready-to-eat foods, hand-washing and employee illness policy. This is joint inspection 1 for BP FSIO1 certification.
