Item 2E (Critical): Accurate thermometers not available or used to evaluate potentially hazardous food temperatures during cooking, cooling, reheating and holding. Comments: Observed temperature log. Milk was delivered one day at temp of 55dF- facility did not serve and called prep site for new milk. Temperature log shows milk coming to facility ~40dF and facility serves lunches from 12-1pm. Discussed with volunteer taking a second reading around 12:30pm to verify phf/tcs items are still 45dF or less. CCHD to discuss with prep site options of phf/tcs items coming to facilities at colder temperature or increasing the number of ice packs in the coolers. Currently there is one ice pack per 20 lunches and ice pack is set on top row of bagged lunches. Observed table clothes down and volunteers changing gloves after contamination. |
