Display case is no longer used to hold potentially hazardous foods (pies and other baked goods only). Fly barriers have been added to display case and front door has been repaired to close properly. Issue with sanitizer in 3 bay has also been addressed.

Comments: Discussed deficiencies with the operator. The Temperature of Blue Cheese Crumbles in the Upper Compartment of the Bain Marie was 44 degrees F and Deli Ham, Chicken Salad, and Grilled Chicken Breasts in the Low Boy Cooler measured between 37 to 39 degrees F. Dish Ware is washed, rinsed, and sanitized in the three bay sink. The Fire Suppression System on the Ventilation Hood was inspected in September 2015. The owner mentioned that he has been catering events off site, sometimes using the kitchen at the facility where the event is being held. He also mentioned that he caters events where the food is cooke at this restaurant, and then transported to the various events. He also confirmed that he uses this restaurant as his commissary. The inspector strongly encouraged him to contact our office concerning this catering operation. Report e-mailed.
