Observed proper thawing procedure for frozen steaks (per chef, placed in reach-in cooler). Discussed techniques for sanitizing, hot-holding, reheating, cooling, and handling garnishes - good. Operator and chef both Food Safe Certified. Product thermometer provided. Facility observed to be kept very neat and well-maintained.

Cook not on-site at time of inspection, staff arriving near end of inspection to begin preparations for opening. // Manager stated that restaurant will remain open Thurs - Sun for the remainder of the year, after which the restaurant will stay open from approximately February through December of the following year. May close in January for minor renovations. // Kitchen prep station cooler - pickles: 42F, walk-in cooler - celery w/ water: 36F, salad station cooler - dressing: 32F. // Bar & restrooms - acceptable. // Two proper stem-type product thermometers readily available. // Kitchen/facility observed to be clean and well maintained.
