Hot held rice at 189 degrees F. Won ton soup and egg drop hot held at 180 degrees F. Cold temps maintained between 38 and 39 degrees F. Upon arrival operator had a bucket of fried chicken out on cabinet however placed it back in cooler immediately. The product was still cold below 45 degrees F, in acceptable temperature range. Education was provided. Operator communicated that she understands that this cooked product must stay refrigerated and kept cold below 45 degrees F at all times even when it is busy. Operator will correct light end caps and send a photo when done. |
