Additional ice/water bath is being used to ensure foods remain within proper temperatures. Ice water bath is 50% ice, 50% water under the stainless steel containers keeping foods. This ice water bath is to be maintained throughout service with constant temperature taking, temperature logs every 30 minutes, constant stirring of foods and keeping the foods below the highest point of container. Failure to comply will result in further formal legal action. Embargo on unit is now lifted and units can be used to serve foods. Re-inspection to take place.
