Comments: Comment: Inspector discussed the importance of monitoring critical control points (cooking, cooling, reheating hot and cold holding) when preparing food requiring time temperature control for safety usng accurate food probe thermometer with cook. Also, discussed the importance of handwashing and using barrier when handling "ready to eat" food. Food worker was very cooperative and motivated to learn proper food safety.
