Comments: Re-inspection following 9/12/17 inspection. Information received by e-mail correspondence and phone calls with the Executive Chef (Chris Spina). Homestretch Grill: The Traulsen sandwich cooler was inspected by the facility's refrigeration specialist and no equipment repairs were needed. The refrigeration specialist set the unit temperature to 40 degrees F, the sandwich cooler is consistently measuring less than 45 degrees F. The Executive Chef has provided education to Homestretch Grill staff to close the lid of the unit when not in use and document the cooler temperature. Clubhouse kitchen: Executive Chef states the standing water in the reach-in cooler located at the bar was drained. The drain was clogged and cleared out; unit is now adequately draining. Water was observed pooling on the floor beneath the Pepsi fountain drink dispenser during the 9/12/17 inspection. A Pepsi service specialist serviced the unit and a leaking pipe was repaired. The floors and walls behind the dishwasher are scheduled to be washed and repaired by maintenance staff. Fortune's kitchen: The floors beneath the equipment were scrubbed following the inspection on 9/12/17 and a routine cleaning schedule is now being implemented. Loading dock near Fortune's kitchen: Maintenance staff repaired the one inch gap located at the lower right corner of the closed overhead door. As per e-mail from Executive Chef, maintenance staff affixed wood to the gap and light from the exterior is no longer coming through. Discussed proper cooking, cooling, and reheating of chicken wings with Executive Chef.

Comments: 34 Rush: All equipment (inside and out) satisfactorily cleaned and sanitized. Floors beneath equipment visibly clean, floor at bar repainted. No water accumulation or slime observed on floor beneath glass chiller units. Glass chiller units also placed on casters to allow for easy moving and cleaning. Snack mix, cutting boards, and knives for slicing fruit properly stored in vermin proof containers. No rodent droppings observed at time of inspection. As per interview with bartender, storing glass bottles or other items in ice basins is being strictly enforced and education was provided to bar staff. No glass bottles observed in ice basins at time of inspection. Very limited light available for regular cleaning of equipment, floors, and surfaces by bar staff during regular work hours at 34 Rush; accessible artificial light fixtures are recommended by this department. Food Service Manager (Jody Coffta) states second floor Clubhouse dry storage room is currently undergoing rodent proofing. Maintenance is sealing all areas of possible rodent entry. Replacement white vinyl cutting boards for Fortune's sandwich units have been installed. Dishwasher replaced at Homestretch Grill. Facility shall continue providing weekly pest control service reports to this office. (1.5)
