Comments: Tomatoes in the front kitchen prep cooler top section by the walk in cooler, temped at 38F. Chicken breast in the 3 door reach in by the stove temped 40F. Oil and garlic in the prep cooler top section by the stoves temped at 38F. Two containers approximately 15 gallons in size each. Both containing pizza/marinara sauce temped at 186F, cooling at room temperature. Discussed proper cooler methods with operator and instructed the setting up an ice bath starting with one container at a time. Operator instructed to temp both containers regularly to ensure proper temperatures and proper cooling meeting approved cooling curves of 120F-70F in 2 hours and 70F - 45F or lower in an additional 4 hours. Also discussed making smaller batches of sauce so that ice baths could be done more efficiently in the future. Ice bath started at approximately 5:15PM temp at start 184F, temp after approximately 30 mins 155F. Temp as of 6:00pm was 131F.
