Chef stated that on weekend of 10/31/15 about 300 Cesaer salad served. Lettuce is washed in 2 bay food prep sink 3 times before placing in spinner to take water out. Gloves are used while washing and making salad. No red violation(s) noted at the time of inspection. All hot and cold holding unit temperatures accurate at this time. Work order is placed for leaking 2 bay sink piping and unshielded lights at the time of inspection.
