Both were well over 120 degrees and thus no violation was observed. However, the staff attempted to put them into the walk in cooler to cool without cutting up the roast beef or putting the broth into smaller containers. Advised them to cut the roast beef into 3 pieces and put the soup into smaller containers and put them into the walk in cooler unwrapped. Called JL to talk about it and since I prevented the improper cooling, it was not listed as a violation. Advised the FSE to always cut large cooked roasts as such into smaller pieces after cooking, with each piece having a maximum weight of 5 pounds as well as either separate the broth/soup into smaller containers or use an ice wand to cool properly. |
