Education was provided to staff about recommended use of shallow metal container of 4 inch depth or less to keep foods cold during service, and importance of only taking enough food out for service that is needed so that cold temperatures are maintained. Information was also provided about benefiits of keeping food temperature and cooling temperature logs, and proper methods of maintaining such logs. Operator was reminded to contact office once mechanical dishwasher is repaired (business card given). |
