Comments: Cooling is done on sheet trays in walk-in cooler or shallow pans. No items were being cooled at the time of the inspection. Reaching freezer does not appear to be working properly. Thermometer in this unit was reading low 40s. Walk-in cooler appeared to be running a little warm with food temperatures at 43 to 45 degrees F. Operator scheduled a service call for both visits and repair person visited the facility prior to the end of the inspection. Facility’s food probe thermometers properly calibrated. High temperature dishwasher working in accordance with manufacturers specifications. Paper towels were present at hand wash sink but dispenser has been removed. A new dispenser has been ordered and will be installed. Servers make salads and cut ready to eat vegetables. Gloves were present at salad station and education on glove use was provided.
