Mac salad in display cooler temped at 38 degrees. Sub station cooler needs to be serviced before being restocked with potentially hazardous items. Temperatures of foods in stand up fridge in kitchen are also borderline at time of inspection (45 degrees). Employee states that she will call refrigeration repair and have him service both units. Hot held hot dog temped at 144 degrees. Hot held chicken fingers in display hot box temped at 152 degrees.

Comments: Discussed deficiencies with the operator. Also discussed the proper settings for cooling on the Bain Marie and the Reach-In Cooler. Food temperatures in the upper and lower compartments of the Bain Marie were between 44 and 47 degrees F. Food Temperatures in the Deli Display Cooler were measured to be between 35 to 38 degrees F. Food temperatures measured for those items in the Reach-In Cooler were between 44 to 47 degrees F. Skim Milk and Half and Half in the Creamer Dispenser were measured to be between 36 to 39 degrees F. Hot Dogs cooked on the grill were measured to be 184 degrees F and Hamburgers in the Display Warmer were measured to be between 155 to 166 degrees F.
