Comments: The operators agreed to provide water for hand-washing and for the rest room facility for the employees. They will also send us a copy of the bill from the repair person who unthaws the water lines. Their menu will be limited to pizza and items that can be prepared on the deep fryer. We will return to check on the water when the lines have been thawed out. Discussed the deficiencies with the operator. Operator understands that they must provide water for hand-washing and the rest rooms until the water lines are unthawed and service restored. Report needs to be MAILED.

Comments: The red violations observed during the last inspection were not an issue at this time. The owner purchased a new dial, probe thermometer and the egg shells are being disposed of at the time of use and not placed in the carton. All of their pizza slices are being kept under a sneeze guard and disposed after two hours holding at room temperature according to the owner. Discussed the handling of garlic rolls and reheating these items to at least 165 degrees F. The operator placed the rolls in the oven for about 4 minutes and the temperatures of the rolls ranged from 172 to 181 degrees F. Report needs to be mailed since the owner does not have an e-mail address.
