The owner purchased a new dial, probe thermometer and the egg shells are being disposed of at the time of use and not placed in the carton. All of their pizza slices are being kept under a sneeze guard and disposed after two hours holding at room temperature according to the owner. Discussed the handling of garlic rolls and reheating these items to at least 165 degrees F. The operator placed the rolls in the oven for about 4 minutes and the temperatures of the rolls ranged from 172 to 181 degrees F. Report needs to be mailed since the owner does not have an e-mail address. |
