Comments: Temperatures taken of food items and in refrigeration were found to be acceptable. Food was cooked and kept the walkin cooler at the Elks lodge in Oneonta. In the walk in there are (five) 5 gallon buckets and (two) three gallon buckets of corned beef broth with fat layer. Buckets were measured at 46-47 F. There is an additional pot of approximately 15- 20 gallons of broth with fat layer. The pot was measured at 46 F. There are two 96 qt containers of sliced cooked corned beef in the cooler also, the containers measured 43F and 45 F. Cook states that this food was prepared last night for the Copper Fox for St Patrick's dinner. Food was cooked by Jeremy Saunders ,who was available on site for interview. according to interview with operator food was properly cooked and cooled off site, temperatures were monitored during preparation and cooling. Food will be transported in van to location less than 1/2 mile distance and then loaded on to trays in the walk in at the Copper Fox will be reheated to 165 F in oven for service. Edit email on file.
