Wash temperature on the Mechanical Dish Washer read 165 degrees F and the Rinse temperature was 190 to 194 degrees F. Operator measured and recorded air temperatures in all coolers in a binder. The following food items were measured on the steam table: Green Beans - 186 to 193 degrees F, Chicken Soup - 185 degrees F, Baked Ziti - 176 to 183 degrees F.
