Comments: All deficiencies must be corrected. There is no dedicated hand washing sink in the kitchen, but the two bay sink is used for hand washing. The Cooler and Freezer in the Dining Area were left open during the time that the students occupied this area for lunch. Food items in the two coolers in the Kitchen were measured to be about 37 degrees F. Italian Sausage and Home Fries were measured to be about 173 to 175 degrees F before being placed in the steam table. The final rinse on the Mechanical Dish Washer was measured to be about 100 ppm chlorine residual. The sanitizing bucket had a chlorine residual of about 50 ppm. Report e-mailed.

Comments: Discussed deficiencies with the operator. This facility has a two door Reach-In Freezer and a Milk Cooler containing fresh vegetables placed in the Dining Room due to a lack of space in the Kitchen. Strongly encouraged the operators to lock both of these units before the students arrive to occupy the Dining Area. There is a noticeable lack of all kinds of storage space in the Kitchen Area, especially in the Dry Goods Storage Room. Report e-mailed.

Confirmed with food service director that Andes CSD did not participate in the NYS summer feeding program the summer of 2016.

The following air temperatures were recorded (degrees F): Foster Reach-In by the Dry Storage Area - 37, Milk Cooler - 36, Produce Cooler - 37. Hot Items that were just prepared for Lunch (degrees F): Chicken strips for Fajitas - 179.4, Cooked Rice - 192.4. All Hot Items were immediately placed on the Steam Table. The Chlorine Residual for The Dish Washer Rinse Cycle was 50 ppm. Report e-mailed.

Additional storage/ shelving is necessary in cafeteria, new unit is to be smooth, cleanable, and non-absorbent. All refrigerators and freezers working and maintaining proper tempatures. Chemical dishwasher had a residual of 75 ppm.
