Grilled cheese sandwiches delivered from Ideal supermarket across street on Tuesdays at 11:30AM and served immediately (per principal). Observed product thermometer, gloves, sanitizing wipes. Children bring their own lunches all other school days. School provides milk daily, stored in refrigerator. Food service is no longer held in church hall across from school yard, but is now served in classroom on first floor within school. Ovens no longer available, however hot food is served immediately upon delivery.

Comments: ATOI = at time of inspection. Foods are cooked/prepared in Liberty High School kitchen, brought down to St. Peter's kitchen at 10 am, and placed into oven (for hot-holding). As per food server/plate preparer, Abby, food dishes are placed into oven (10 am) prior to her arrival at 11:00 am. Temperatures of foods, prior to her arrival and also at time that foods are removed from oven for individual plate distribution (at approx 11:20 to 11:30 am), are noted below. Temperatures ATOI at 11:40 am: chicken nuggets - 126 degrees F, mixed vegetables - 126 degrees F and noodles - 117 degrees F. After foods are distributed and served, leftovers foods are immediately discarded (routinely) - observed ATOI. As per Abby's log book, Temperature of foods upon Abby's arrival: chicken nuggets - 190 degrees F, mixed vegetables - 190 degrees F and noodles - 190 degrees F. Temperature of foods upon plate preparation (removed from oven): chicken nuggets - 200 degrees F, mixed vegetables - 195 degrees F and noodles - 195 degrees F. Milk and canned mandarin oranges served with lunch also. As per Abby, pans/pots, utensils are only pre-washed onsite, and are then put through the dishwasher upon return to the Liberty High School. Countertops and equipment surfaces are washed and sanitized by custodian following lunch service; therefore, sanitizing solution not used during food service.
