Operator indicated that the unit had warmed slightly due to the door being frequently opened and closed. Discussed adjusting the thermostat to maintain the unit temperature at less than 45F (ideally 41F or less). Hot-holding: white rice 158F, fried rice 155F, egg drop soup 157F, wontons 140F. Cold-holding – open top cooler (upper compartment) – raw beef 40F. // No roaches were observed during inspection, and monitor (glue) traps were observed to be empty. Monitor traps were dated 11/12/18 – photo taken during inspection. Proper test strips were readily available for use. Hand-wash sink and restrooms were observed to be properly maintained.
